Yummy whole grains! Yummy whole grains!
Number of Servings: 8

    Old-fashioned oats, 2 cups
    Whole wheat flour, 1/2 cup
    Light brown sugar, 2 tbs
    Chopped walnuts, 1/2 cup
Sugar free maple syrup, 1/4 cup + 1 tbs
    Canola oil, 1 tbs
    Water, 2 tbs
    Craisins, 1/2 cup

Preheat oven to 275
Mix all the dry ingredients (except cranberries) in a bowl
Mix all the wet ingredients in a microwave-safe bowl, microwave until it's bubbling
Drizzle the liquid mixture over the dry mixture, stir thoroughly.
Add cranberries to the mixture
Spray nonfat cooking spray on a baking sheet
Spread the granola out on the baking sheet. Use your hands to form clumps so that there are no cranberries standing alone (they will burn).
Bake for about 30 min. Since there is nothing in this that can't be eaten raw, you can take it out whenever it has the texture that you prefer. If you like it extra crispy, you will need to pull it out halfway through and turn the granola over so it doesn't burn on the bottom.

I can typically pull 8 handfuls from one batch, so I put 1/8 of the recipe as the serving size.
