Introduction

I took this recipe from the Kraft Food & Family magazine, I used ground turkey instead of beef, added a bit of cumin, onions, bell peppers, corn and used brown rice instead of white. Yumm, also would like to add some black beans to it next time. Ingredients

    1 lb ground turkey
    1/2 c chopped onion
    1/2 c chopped bell pepper
    1tbsp chili powder
    1tsp cumin
    1 c ff chicken broth
    1 c water
    2 c instant brown rice
    1/2 c cheez whiz
    2 c shredded lettuce
    1 c chopped tomatoes

Directions

brown ground turkey, onions and bell peppers. add chili powder, cumin, broth and water, boil. stir in rice, cheez whiz, and corn. cover and simmer for 5 minutes. Serve topped with lettuce, and tomatoes. Makes 8 servings, 1 cup each.

You can also serve this on a bed of crushed baked tortilla chips with a bit of sour cream on top for a salad (of course these are not in the calorie count)
