Ingredients

0.5 lbs pork loin chops (sliced)
2 tbsp canola oil
1 onion, medium
1 green pepper, medium
1 cup fresh mushroom (sliced)
salt and pepper, add to taste
1 tsp curry powder
2 tsp chili powder
add other various herbs/seasonings as desired
1/4 cup water
1 tomato (diced)
1/2 cup light cheddar cheese (grated)
6 tbsp sour cream, fat free
6 tbsp salsa
Directions
Add oil to frying pan. Brown pork. Add onion, pepper, and mushrooms. Add all spices/herbs/seasonings. Add water. Reduce to med-low heat, cover and simmer for a few minutes.
Fill 6 tortillas with pork mixture. Add other toppings. Wrap and enjoy!
Makes 6 pork fajitas.
