Ingredients

    Dried Pinto Beans(1/4 cup dry), 4 cup (remove)
    *Pork, fresh, shoulder, arm picnic, separable lean and fat, raw, 16 oz (remove)
    Onions, raw, 3 cup, chopped (remove)
    Celery, raw, 2 cup, diced (remove)
    garlic
    bbq seasoning
    salt
    liquid smoke

Directions

Soak beans overnight with baking soda. Drain and rinse. Add onion, celery and beans to crockpot. Add 12 cups water (to top of crockpot). Trim pork (starting weight about 1.25 lbs) and place on top. Turn crockpot to auto. When beans are start getting soft, add 2 tsp bbq seasoning and 1 tsp liquid smoke. Cook until very soft. Take out pork, let cool slightly, and cut up, return to pot. Add salt to taste. Serve with hot sauce and chow chow.
