    Mushrooms, fresh 1/3 cup
    Scallions 1/4 cup chopped
    Extra Virgin Olive Oil, 1 tbsp
    1/4 tsp. dried rosemary, parsley, thyme and oregano
    Tofu, firm, 1/2 5oz block
    Cheddar Cheese, 2 oz


In a non-stick skillet, lightly saute mushrooms and scallions in oil for 2 minutes over medium-high heat. Crumble tofu in skillet and add herbs and pepper. Scramble for 3 minutes, then add cheese and cook until melted, about 1 minute.
Best if served within 1 to 2 days. Makes 2 1-cup servings.
