Ingredients

    5 cups fresh mushrooms
    2 cups Zucchini
    2 14.5 oz cans diced tomatoes
    2 cups diced sweet onions
    2 blocks of firm or extra firm tofu
    4 cups 99% fat free beef broth
    4 cups water
    5 beef bouillon cubes
    2 tsp crushed chilis (or to desired taste)
    1 whole bay leaf

Directions

Makes 18 1-cup servings.

combine all ingredients, bring to a boil.
Reduce heat and simmer on low heat for 1 hour.
