    1 8 oz. package tempeh, cut widthwise into 2 cutlets
    1/2 cup white wine
    1 Tbsp. herbes de Provence
    2 tsp olive oil
    2 cloves garlic, crushed (optional)
    1/2 large red bell pepper, chopped (optional)
    1/4 c. smooth tomato sauce
    2 tbsp. capers, drained and rinsed
    1/8 tsp sugar
    1/2 c. fresh basil (optional)


Boil tempeh for 10 minutes.
Meanwhile, fill baking dish with sauce by combining the rest of the ingredients.
Place tempeh in dish and cover with sauce, cover dish, bake for 20 minutes at 400 degrees.
Flip tempeh, bake 20 more minutes.
