Number of Servings: 4


    -Spaghetti (or your fav. pasta)
    -1 cup broccoli
    -1 cup sliced zucchini
    -0.5 cups eggplant (cubed or sliced)
    -4 oz Mozzarella cheese, crumbled into chunks
    -30 grams Goat Cheese crumbled
    -10 tbsp Spaghetti sauce
    -2 tbsp butter or oil
    -5 tbsp water


Makes 4-6 servings

1) Preheat oven to 300
2) Cook pasta until just before al dente (if cooking long pasta such as spaghetti or linguine, break in half before cooking)
3) Butter/oil bottom of casserole dish
4) Put a layer of cooked pasta, then sprinkle veggies, crumbled cheeses, and dish out 1/2 the pasta sauce on top
5) Add another layer of pasta and the rest of the pasta sauce.
6) Sprinkle a bit of water (about 5 tbsp in total) over top
7) Cook in over approx 90 mins, checking occasionally to ensure the top pasta doesn't get crispy (add more pasta sauce or water if needed)
