Number of Servings: 4


    1 package sliced mushrooms
    1 zucchini, shredded
    2 ounces low fat chedder, shredded
    1 container egg beaters
    2 ounces of ham, shredded


Spray a baking pan with olive oil spray

add vegetables and toss lightly
sprinkle with 1/2 the cheese
add on the ham if using
pour in the egg beaters
sprinkle remaining cheese
bake at 350 til done

Serve or cut in slices and use later in the week
