Introduction

A southern treat trimmed down a bit. If in a hurry, this can be made quickly in a 9x13 dish or even as cupcakes, but is traditionally a 3 layer cake. I use whole wheat flour, but regular flour makes a lighter cake. I haven't tried using splenda in the cake, but that is an option if you want to try cutting the calorie/carb count down. Ingredients

    HUMMINGBIRD CAKE
    3 cups whole wheat blend flour or regular
    2 cups sugar
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 teaspoon ground cinnamon
    1 cup chopped pecans
    3/4 cup egg beaters eggs
    3/4 cup organic apple sauce
    1/4 cup canola or vegetable oil
    1 1/2 teaspoon vanilla
    1 cup crushed pineapple, undrained
    2 cups chopped bananas
    8 ounces light or fat free cream cheese, softened
    1/2 cup low fat margarine, "salt free"
    1 1/2 pounds confectioner's sugar
    1 teaspoon vanilla extract


Directions

HUMMINGBIRD CAKE

Step 1
Sift the following ingredients together:

3 cups flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon

When finished add

1 cup chopped pecans and set aside.

In another bowl combine:

3/4 cup egg beaters
3/4 cup organic apple sauce
1/4 cup canola or vegetable oil
1 1/2 teaspoon vanilla
1 cup crushed pineapple
2 cups chopped bananas.

Step 2
Stir all together by hand, NOT in a mixer, until well mixed. Do
NOT beat. Fold liquid mixture into dry mixture until well-mixed.
Again, do NOT beat!

Step 3
Divide batter into three 9-inch cake pans that have been greased
and covered with a fine layer of flour. Bake in a 325
degree oven for 25-30 minutes, or until set in the center. Make
sure not to overbake the cake. It makes all the difference between
having a wonderful cake or a dry mass of flour and sugar.

Step 4
Cool cakes, then ice with:

8 ounces light or fat free cream cheese, softened
1/2 cup butter, softened or low fat margarine, "salt free"
1 1/2 pounds confectioner's sugar
1 teaspoon vanilla extract

Beat together cream cheese and butter until mixed, then beat in
sugar. Finally, add vanilla.
