Introduction

A great Mexican style chicken dish that is low in carbs and high in protein. A great Mexican style chicken dish that is low in carbs and high in protein.

Ingredients

    6 boneless, skinless chicken thighs
    3 boneless, skinless chicken thighs
    3 tbsp olive oil
    2-3 tbsp lime juice
    1 tbsp ground cumin
    1/2 tbsp ground chipotle pepper
    1 large sweet onion
    1 yellow bell pepper, sliced
    1 pasilla or poblano pepper, sliced
    1-2 large limes, sliced

    1 15 oz can of Juanita's Mole sauce or your preferred sauce

Directions

Slice the onion and peppers into 4" long slices. Cut the chicken thighs into narrow slices. Heat a large skillet over medium high heat. Add 2-3 tbsp olive oil. Heat the onion and peppers til the onions become translucent. Set aside. Saute the chicken until done. Add the lime juice and cook for 2-3 minutes. Add the cumin, chipotle, salt and pepper to taste. Mix the onion and peppers back into the skillet. Stir until onion and peppers have become hot again and spices are mixed well.

While finishing the chicken dish, heat the mole sauce until it is hot.

Serve the chicken, mole or other sauce with black beans, brown rice and low carb tortillas. Garnish with lime slices
