    .5 cup peanut butter
    .5 cup agave
    .5 cup chopped nuts
    .5 tsp vanilla extract
    .5 tsp cinnamon
    2 cups erewhon Crispy Brown Rice Cereal


Mix peanut butter, agave, nuts, vanilla and cinnamon together in a bowl. Add cereal and stire gently until cereal is well coated. Use a small cookie sccop to form balls. Roll balls in coconut. May require refrigeration to hold shape.

    This was pretty good & has a lot of versatility. I didn't have agave nectar so I used 1/4 c. honey but felt it was too sweet. I toasted the coconut & made them into bars. My teens wanted to eat the whole pan in 1 sitting. Next time, I'm going to add banana extract, toasted coconut & dried pineapple. - 3/11/15
