healthier creamy tuna casserole

Number of Servings: 8


    fat free cream cheese, 4.2oz
    1 whole onion, 172 g
    tuna pouch, in oil
    tuna, canned in water
    mushrooms, 8oz fresh, sliced
    1 bag frozen stir fry vegetables
    garlic cloves, 5-6
    1can chicken broth or water


chop ionion, saute in sprayed pan
add garlic
add all ingredients, including broth or water, stir, cover, bring to a boil, stir again and simmer for 15 minutes until pasta is done and liquids are absorbed, stirring occassionally.
When pasta is done, cube the cream cheese and stir into pasta dish, serve.
Makes 8 1-cup servings.
