    2 sheets of nori
    1 fresh horseradish sticks, sliced thin
    4 carrot sticks, sliced thin
    4 cucumber sticks, sliced thin (leave skin on cucumber)
    6 whole chives
    1/4 cup RAW almond cheese recipe
    1/4 cup marinated portobello (see recipe)
    lettuce leaves, enough to cover


On a sheet of nori arrange a few horseradish, cucumber and carrot sticks and chives along the edge of the nori, closest to you with the ends sticking out of each end of the roll. Spread 1/8 cup RAW Almond cheese on top of the vegetables, being careful not to allow the mixture to touch the nori.

Add a layer of marinated portobello mushrooms and lettuce leaves. Roll, slice into bite-sized pieces and garnish with sesame seeds. Repeat the process with for second roll.
