Number of Servings: 6


    1 onion, red or yellow, chopped
    4 Tbsp.margarine (can sub. water for this)
    2 Tbsp. balsalmic vinegar
    1 Tbsp brown sugar, not packed down
    7 oz. water
    2 tsp. sea salt (can reduce to 1 tsp)
    1 tsp. black pepper, crushed
    1 tsp. ground nutmeg
    1 tsp. hot pepper sauce (can be omitted)
    1 lg. (7") cauliflower, cut into sm. pieces
    (set aside 6 small florets for garnish)
    12 oz. baby spinach


In a large pot on medium high heat, melt margarine and saute onions until they soften.

Add balsalmic vinegar and brown sugar, salt, pepper, nutmeg, pepper sauce, and about 7 ounces of water. Stir.

Add in cauliflower pieces, coating with sauce.
Cover pot and steam until just tender.

Uncover pot, add spinach, stirring until covered with sauce, steam 30 seconds, until just wilted. Do not overcook spinach. Spinach should be bright green.

Remove cover, and spoon veggies with the sauce into food processor or blender. Puree. This may have to be done in a few batches, depending on the size of your machine.

Your mashed cauliflower and spinach is ready for serving. Garnish with the tiny florets of cauliflower.

You may substitute margarine with water and steam the veggies.
You may use brown sugar substitute to lower calories.
This recipe should not stay on the warmer after cooking because the spinach will turn dark green, changing the appearance of the dish.
