Number of Servings: 14


    2 tablespoons olive oil
    1 lb. 93% lean ground beef
    1/2 large onion, chopped
    3 garlic cloves, chopped
    1 quart broth (or water)
    3 cups peeled, chopped potatoes
    1 1/2 cups chopped carrots
    6oz can tomato paste
    1 tablespoon Italian seasoning
    1 tablespoon salt
    1/2 teaspoon black pepper
    green beans (either 2 cups fresh or 1 can, undrained)
    one can corn, undrained
    one can peas, undrained
    Optional: You can certainly add bell pepper or celery if desired. Sometimes I use celery seed instead.


Brown meat in heavy pot with oil, onion and garlic. Add water and fresh vegetables. If using canned green beans, add those later. Cook until vegetables are nearly done. Add tomato paste, seasoning and canned vegetables. Cook a few minutes to blend all the flavors.

Yields about 12 cups of stew.
