Number of Servings: 1


    4 oz Fat Free Cottage Cheese (snack pack)
    1/2 cup old-fashioned oats
    12 almonds
    2 tsp skim milk (or almond milk)
    1/2 tsp vanilla extract
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg


Makes 3 small pancakes

Pre-heat medium skillet on medium heat.

Combine all ingredients in a mini food processor. Pulse until smooth. Mixture will be a little thick.

Spray skillet with cooking spray. Spoon mixture into skillet, forming three small pancakes. When bottom has set, approximately 2 1/2 minutes, flip pancake over. You will not see bubbles as you would with a normal pancake batter so you need to watch carefully so the pancakes do not burn.

Leave on other side approximately 2 1/2 minutes to ensure the pancake is fully cooked. Remove from pan and top with your favorite condiments. (I top mine with ICBINB spray and sugar-free maple syrup.)
