Ingredients

    4 c. chicken broth
    3 tbsp soy sauce
    3 garlic cloves
    1.5 tsp ground ginger
    4 oz pad thai noodles broken into pieces
    2 tbsp cornstarch
    2 eggs, beaten
    1.5 cup cooked chicken

Directions

Bring the broth, 1 1/2 cup of water, soy sauce, garlic and ginger to a boil over medium heat. Reduce heat and cook 10 minutes.
Add noodles, cook for 4 minutes. Stir together cornstarch and 2 tsp water in small bowl. Whisk into broth and cook for 1 minute. Stir the soup and keep moving clockwise while pouring in eggs and mixing in chicken.
