    2 tbs Extra Virgin Olive Oil
    1/2 can Progresso Vegetable Classics Tomato Basil Soup
    1 cup skim milk
    1 medium yellow onion chopped
    2 roma tomatoes
    2 cups crimini mushrooms (or your favorite), chopped
    1 cup spinach
    5 Pork chops, thin cut (3/4 inch thick) (fresh, loin, center loin (chops), bone-in, separable lean and fat, cooked, braised)
    garlic salt and pepper to taste


Heat olive oil in pan over med/med-high
Season chops with garlic salt and pepper, brown both sides
add 1/2 can tomato basil soup, 1 cup skim milk, and 1 cup water to pork chops
add onion
add two cubed roma tomatoes
add crimini mushrooms
add garlic salt and pepper to taste

Let simmer for 1-2 hours (we did 1 1/2) (uncovered)
Add spinach 10 minutes before serving

Options (not included in nutrtion analysis)
-add glurg of red wine
-add fresh basil at same time as spinach
-add whole fresh garlic cloves when browning meat

Also, can create into a crock pot recipe by browning chops first then adding all ingredients (minus spinach) and cook on low 6 hrs. add spinach 20 min before serving).

Serve over brown rice or egg noodles. (not included in nutrition analysis)

1 serving equals 1 pork chop and 1/5 of sauce plus veggies

  • Very good. Chops very moist with good flavor. Next time I will leave out the water since the sauce was very watery! - 9/15/09
