    14-16 oz beef kielbasa
    2 14.5 oz cans vegetable broth
    4 B size potatoes
    1 14.5 oz can water
    1 cup dried lentils
    1 can (14.5 oz) petite diced tomatoes, undrained
    1 medium onion, chopped
    3 medium carrots, sliced
    2 stalks celery, sliced
    3 cloves garlic, minced
    1 tsp fresh thyme, chopped (or 1/2 tsp dried)
    1 tsp fresh marjoram, chopped (or 1/2 tsp dried)
    1 tsp fresh oregano, chopped (or 1/2 tsp dried)


Add kielbasa to soup pot, brown. Once kielbasa is browned add onions, celery, carrots and garlic. Continue cooking until onions are tender. Add potatoes, broth, water, tomatoes, lentils and spices. Return to a simmer, put lid on pot and let simmer for 45-60 mins or until potatoes and lentils are tender.

  • Yummy! Definitely quick which is critical. You can cut some of the sodium down (only stat that might raise an eyebrow) by substituting in low sodium broth and if need be blanching your own tomatoes (which cuts out the speed of this recipe). Yummy! - 3/29/09
