Adaptation of Moosewood muffins. Adaptation of Moosewood muffins.
Number of Servings: 12


    Dry ingredients:
    1 cup whole wheat flour
    1 cup all-purpose white flour
    2 tbsp milled flaxseed
    1tsp baking powder
    1/4 tsp baking soda
    1/2 tsp cinnamon

    Wet ingredients:
    1/2 cup sugar
    6 tbsp unsalted butter
    1 large egg
    1 cup + 2 tbsp milk

    1 cup strawberries
    1/2 cup oats
    1/2 cup almonds


Pre-heat oven to 350 degrees.

In one bowl:
1. Smooth butter and sugar
2. Beat in milk and eggs. (mixture will be lumpy)
3. Fold in filling with spatula

In second, larger bowl:
1. Sift in all dry ingredients.
2. Fold in the wet ingredient/filling mixture. Do not mix together to thoroughly!

Spoon mixture evenly into a muffin tin.

Bake for 20 minutes. Rotate tin, bake for 10-15 minutes more. Let cool, then either serve immediately, or put in sealed tight container and refrigerate.
