Number of Servings: 12

Ingredients

    2 lbs lean ground turkey - white meat only
    16 ounces sliced mushrooms - chopped
    4 tbsp butter or 2 tbsp olive oil
    3 cloves garlic
    2 eggs
    1/2 tsp Thyme
    1/2 cup seasoned bread crumbs
    1 tsp Sea Salt (or to your taste)
    1 tsp course ground black pepper
    1/4 tsp ground cumin
    Optional - 1 tsp curry powder for a different flavor

Directions

Finely chop mushrooms. Saute in pan using butter or oil. Add pressed garlic. Saute until most of the liquid is gone. Put in a bowl and allow to cool for 5-10 minutes. Add ground turkey, eggs, and seasonings to the bowl. Moisten the bread crumbs with a little bit of water to make a paste. Add to ground turkey mixture. Gently mix all ingredients together. Evenly divide the mixture into 12 muffin cups sprayed with non-stick cooking spray. Bake in 350 oven for 45 minutes.

This recipe is easliy halved if you don't need to have extra for lunches throughout the week.
