Ingredients

    2 Packets Instant Oatmeal or 3/4 cup rolled oats
    1.5 cups whole wheat flour
    1 tsp baking soda
    1 tsp cinniman
    1 tsp salt
    1 tbsp sugar
    1 tbsp brown sugar

    2 ripe bananas
    2 eggs
    .5 cup low fat sour cream or low fat yogurt
    1 tbsp butter
    2 tbsp orange juice
    1 tsp vanilla

Directions

Mix dry ingredients with a whisk. Mix all other ingredients in a separate bowl. Slowly add dry ingredients to banana and egg mixture. Spray muffin pans and fill 3/4 full. Heat oven to 350 degrees and bake for 30 minutes. Makes approx 8.
*also great with walnuts

    Really good! I used the sour cream but I think next time I will try the yogurt...they came out a little bitter.Like they need more sugar or something.but they are good and very quick and easy to make.Thanks - 5/3/09

    Incredible!
    turned out great. I used vanilla FF yogurt and I squeezed juice out of a real orange and it added a nice kick - 4/30/09
