Number of Servings: 4


    * Boneless, skinless chicken breast, 2 breasts
    * Pasta, cooked, 8 oz
    * Garlic, 1 clove, diced
    * Onions, raw, 1/2 cup, chopped
    * Broccoli, fresh, 1 cup, chopped
    * Carrots, raw, 1/2 cup, sliced
    * Parmesan Cheese, grated, 1 cup
    * Chicken Broth or Bouillon, 1/2 cup


Cook pasta according to directions. Dice chicken and saute in a skillet until nearly cooked. Add onion and garlic and continue cooking until onion is translucent. Add broccoli, carrots and broth or bouillon and cook until carrots are semi-soft (not mushy.) Arrange cooked pasta on a platter and top with chicken and vegetable mixture. Top with parmesan. The cheese will soften and get melty, blending with the broth and juice from the chicken and vegetables. Simple and oh-so-delicious.
