    1 package frozen mixed vegetables
    1 package of instant mashed potatoes (comes two to a package, prepared)
    1 pound lean ground beef
    1 8-ounce package shredded cheddar cheese


Brown ground beef in skillet and drain, add mixed vegetables and half of cheese, continue to heat until cheese is melted.

Pour into casserole dish (original recipe that I adapted called for four ramekins, which may make easier portion control for some). Top with potatoes and additional cheese.

Bake at 325 for approximately 30 minutes, until cheese on top is melted and bubbly.

Yields 4 generous helpings

Additional notes:
This recipe can be adapted in many ways to meet dietary needs. Cheese can be reduced or removed entire from the recipe, or other cheeses can be used to reduce calorie/fat intake. Generally, when I prepare instant mashed potatoes, I will get a buttery-flavored potato mix, then use water for all liquids. I notice little difference in the taste, and it does cut back significantly on calories.
