Introduction

Low cal blueberry crisp, partially sweetened with stevia.

Eat alone, or its also awesome eaten warm with a little bit of vanilla ice cream, or fat free whipped topping.
Low cal blueberry crisp, partially sweetened with stevia.

Eat alone, or its also awesome eaten warm with a little bit of vanilla ice cream, or fat free whipped topping.

Number of Servings: 6

Ingredients

    4 c frozen blueberries, thawed
    3/4 c quick oats
    3 T Smart balance buttery spread
    2 T sugar
    1/2 oz lemon juice
    stevia to taste
    instant clear jell (instant tapioca) to desired consistancy

Directions

Mix clear jell with the sugar, add mix to thawed blueberries. Add more stevia as needed to sweeten further. Stir in lemon juice.
Melt butter spread, stir in quick oats, add small amount of stevia to sweeten.
Pour blueberries into baking dish, top with oat mixture.
Bake 20 minutes at 350 degrees, or until top is lightly browned.

I divide evenly into 6 small dessert bowls to serve, probably around 1/2 a cup each.
