Number of Servings: 4


    1/4 cup low-fat mayonnaise
    1 tablespoon onion, finely minced
    5 tablespoons seasoned bread stuffing, herb, crushed
    5 tablespoons reduced fat parmesan cheese
    2 teaspoons italian seasoning
    1 1/4 pound eggplant
    cooking spray


1. Preheat oven to 375 degrees

2. In a small bowl combine the mayonnaise and onion. Stir to combine and set aside.

3. In another small bowl combine the crushed stuffing mix, cheese and seasoning. Stir to combine.

4. Cut the eggplant into 3/8" slices.

5. Brush a THIN coating of the mayonnaise mixture onto both side of the eggplant. Drop into the crumb mixture so that a THIN coating sticks to the eggplant and place on a baking pan coated with cooking spray.

6. Gently spray the top side of the eggplant slices with a light layer of cooking spray.

7. Bake eggplant for 20-25 minutes until golden brown and crispy.
