    Baked Potato (baked potatoes), 8 potato (2-1/3" x 4-3/4")
    cream cheese, reduced fat, 8 oz
    Sour Cream, reduced fat, 1 cup
    Chicken Broth, 2 cup (16 fl oz total)
    Parmesan Cheese, grated, 6 tbsp


cut potatoes up and put in a large saucepan

add chicken broth and cover

bring to a boil, then reduce heat and simmer for 16 min. stir after 8 min

take off cover and simmer for 5-6 min until most of the broth is absorbed

add cream cheese, keep it on low heat and mash potatoes until cheese is melted

add sour cream and parmesan--mash until it's all smooth and heated through

serving is 1 cup (makes 10 cups)
