This bread is so delicious and makes a great morning snack! This bread is so delicious and makes a great morning snack!
Number of Servings: 1


    6 oz reduced fat cream cheese
    1/4 sugar
    1 tbsp all purpose flour
    2 egg whites
    1 cup pumpkin
    1/2 cup unsweetened apple sauce
    1 egg
    2 egg whites
    1 tbsp canola oil
    1 & 2/3 cups all purpose flour
    1 & 1/4 cup sugar
    1 tsp baking soda
    1/2 tsp salt
    1 tbsp ground cinnamon
    1/2 tsp ground cloves
    1/3 cup chopped walnuts


Combine the first half of these ingredients and beat well. Keep seperate from the rest of the batter for now. In another mixing bowl, beat the pumpkin, applesauce, whole egg, egg whites. Then combine the flour, sugar, cinnamon, baking soda, cloves, and salt in. Now combine the first half of what you mixed (the cream cheese mixture) with the batter. Pour evenly between two loaf pans coated with cooking spray and place walnuts in the evenly through out both pans.

Bake at 350 degrees for 40-50 minutes and let cool on wire racks. Cut each loaf into even 14 slices or into even 7 even slices. Refrigerate left overs. (If cut into 14 slices, the serving size is two slices, if cut into 7 slices, then each serving is 1 slice.)
