    8 oz boneless, skinless, chicken breast
    4 oz lean ham
    2 oz Swiss cheese
    20 reduced fat Ritz crackers


-preheat oven to 450 degrees
-add crackers to ziplock bag, pound into crumbs and set aside
-slice breasts into 2 thin strips per breast (2 breasts cut in 2 pieces each yields 4 cordon bleus
-pound breasts to less than 1/4 inch thick throughout
-lay 1/8 of ham and 1/8 of cheese onto flat breasts
-roll into tight log
-dip log in bag of cracker crumbs and place in greased pan seam down
-pour remaining crumbs on top of logs
-cover pan with foil
-bake for 25 minutes or until chicken is cooked through
