Ingredients

    1 cup chopped onions
    1/2-1 cup chopped bell peppers
    1 clove shopped garlic
    1 Tablespoon extra virgin olive oil
    1 can(or cup of fresh chopped) tomatoes
    sliced mushrooms optional

Directions

Saute chopped onions, bell peppers, mushrooms and garlic in olive oil. Add diced tomatoes and salt and pepper to tast. Simmer until bubbling. Makes approximately 4 1/2 cup servings.
