    1 1/4 Cups uncooked rice
    Olive Oil
    1 lb Shrimp
    1 Tblsp Cajun Seasoning
    2 Cloves Garlic
    1/2 Green Pepper, chopped
    1/2 Yellow Pepper, chopped
    1/2 Onion, chopped
    1/4 Cup Green Onions, chopped
    1/4 tsp Dried Thyme
    1/2 Cup canned Italian-style stewed tomatoes, undrained
    1/2 tsp Salt
    1/8 tsp Black Pepper


Cook rice according to package. While rice cooks, toss shrimp with Cajun seasoning. Saute shrimp for 4 minutes in olive oil. Remove from pan and keep warm.
Heat some olive oil in pan over medium high heat. Add garlic, saute for 30 seconds. Add Bell peppers, onion, green onions, and thyme, saute for 3 minutes. Stir in cooked rice, shrimp, tomatoes, salt, and black pepper. Cook 1 minute or until thoroughly heated.
