    1 T. olive oil
    1 medium onion, chopped
    2 cloves garlic, minced
    2 16 oz. cans of black beans
    2 t. lemon juice (more/less to taste)
    1 t. ground cumin
    1/4 c. water


Heat the oil in a deep, heavy saucepan. Add the onion and garlic and saute until the onion is lightly golden. Add the remaining ingredients and bring to a simmer. With a potato masher (or similar instrument of destruction), mash some of the beans. Serve on top of a baked tortilla (tostada) or wrapped up with spinach in a steamed tortilla.
