Introduction
It doesn't get much healthier than these! And oh so good! It doesn't get much healthier than these! And oh so good!Number of Servings: 6
Ingredients

1/2 cup Whole wheat flour
1/2 cup Kamut flour
1/2 cup Flax Seed Meal
1/2 cup dark brown sugar
1 tbsp Baking Powder
1/4 tsp Salt
2 large egg whites (4oz)
1/2 cup unsweetened applesauce
zest of 1 lemon
1/2 cup of fresh lemon juice
6 oz Fresh Blueberries
Directions
Preheat oven to 400
Mix all dry ingredients
In a separate bowl, mix all wet ingredients
Mix the dry into the wet until completely blended
Carefully fold blueberries into the mixture
Spray muffin tin with cooking spray or use muffin cups
Pour mix into tin
Optional: sprinkle brown sugar on top of each muffin(not included in nutritional info)
Bake for 25-30 minutes
