    1 c frozen shelled edamame
    1 (8oz) package sliced mushrooms
    1 c egg beaters (or 4 eggs beaten, would up calories)
    1 tbs minced ginger
    2 garlic cloves, minced
    1 (1lb) bag frozen stir-fry vegetables
    1/4 c bottled stir-fry sauce
    2 tbs water
    4 scallions, thinly sliced
    cooking spray (or 2 tsp oil, will up calories)


1) Fill a large nonstick skillet halfway with water and bring to a boil. Add the edamame and cook 5 minutes. Drain and set aside.

2) Wipe out the skillet and spray with cooking spray (can use oil, will up calories) Add the mushrooms and cook until browned. Put mushrooms on plate.

3) spray same skillet with cooking spray and place over medium heat. Cook egg beaters until scrambled. Put eggs on plate.

4) Wipe out the skillet; spray again (can use oil if you would like, up calories) place over medium-high heat. Add ginger and garlic and cook until fragrant (30sec) Add the stir-fry veggies cook until hot. Add the stir-fry sauce, water, and edamame. Cook stirring, 1 min. Gently stir ijn the eggs and scallions and heat through.
