Ingredients

    Hazelnuts, 1 cup

    Buttermilk, lowfat, 1 2/3 cup
    Walnut oil (or hazelnut oil) .5 cups
    Wheat flour, white, bread, enriched, 2 cups
    Whole Wheat Flour, 2 cup
    Brown Sugar, 3.5 tsp packed
    Salt, 2 tsp
    Vital wheat gluten, 15 grams

    Poppy seed, 1 tbsp
    Flax Seed, 2 tbsp
    Yeast, bakers, 1.5 ounce

Directions

Makes 2 one-pound loaves

Toast hazelnuts in 350º oven for 7-10 minutes. Allow to cool. Rub in clean dish towel to remove most of skins. Chop coarsely and set aside.

Add all ingredients to bread machine except hazelnuts, flax seed and poppy seed according to manufacturer instructions. Select dough cycle. When machine indicates, add hazelnuts, flax seed and poppy seeds (or about five minutes before end of kneading). When complete remove dough and divide into two loaves and place in two greased 4.5x8.5 loaf pans. Allow to rise in warm place for 45 minutes. Preheat oven to 375º. Bake for 40-45 minutes.
