    4 medium red potatoes
    1 medium red onion
    1 eggplant
    2 medium summer squash or zucchini
    2 tablespoons olive oil, divided
    1 package Good Seasons salad dressing mix


Preheat oven to 475. Line a large cookie sheet or roasting pan with parchment paper or nonstick foil. This will stick to a bare pan.

Cut onion into 6 wedges. Cut all other veggies into 1 inch pieces.

Mix the potatoes with 1 tablespoon oil and half the package of dressing mix. Does not need additional salt. Spread out in pan and bake for 10 minutes.

While the potatoes are baking mix the rest of the veggies with 1 tablespoon oil and the rest of the salad dressing mix. Add to pan with potatoes, and spread as thinly as possible. Bake for 40 minutes.

Serves 4.
