Number of Servings: 24

Ingredients

    2 cups Splenda
    1 cup applesauce, unsweetened
    1 cup eggbeaters (equal to 4 eggs)
    2 tsp vanilla
    1/2 cup nonfat milk
    3 cups bananas, ripe and mashed (about 4 bananas)
    4 cups whole wheat flour
    2 tsp baking soda
    2 tsp baking powder
    1/2 tsp nutmeg
    1 tsp cinnamon
    1/2 tsp cloves
    2 cups frozen blueberries, thawed

Directions

Preheat oven to 400. Mix Splenda, applesauce, vanilla, milk, and eggs. Add in bananas and mix well. Mix in flour, baking soda, baking powder, nutmeg, and cinnamon. Add blueberries and stir just until berries are mixed in. Spray muffin pans with nonstick spray. Fill each cup 3/4 full of batter. Cook for 20 minutes. Makes 24 regular-sized muffins.
