    2lbs salmon, de-boned, skin on cut into 6 fillets
    4 c fresh spinach, cleaned and drained and stems removed
    2 medium leek, cleaned and cut into thin half-moon slices
    2 medium shallot, sliced thin
    1/4 c dry white wine (viognier works great)
    4 tablespoons butter at room temp
    2 tsp Gourmet Garden Garlic Spice Blend
    1 tsp Gourmet Garden lemongrass Spice Blend
    1 tsp Gourmet Garden Chili Pepper Spice Blend
    1 tsp Gourmet Garden Ginger Spice Blend
    2 medium Lemons, one sliced into rings and the other for juice
    1 Cup Fresh Dill, Divided
    Salt and pepper to taste
    Aluminum foil, cut into 6 1 ft x 1 ft square pieces


Mix butter, garlic, lemongrass, ginger, and chili pepper blends unil well blended in a small bowl. Add 1/4 cup finely chopped dill and about 1 tbsp juice of lemon, mix well. Place compound butter on small piece of plastic wrap, roll into a 3 inch tube and place in the freezer.

Spread out spinach on the bottom of a piece of foil. Sprinkle with salt and pepper add a few shallots and leeks. Rest salmon fillet over top (skin side down). Sprinkle additional leeks and shallots over top, salt and pepper. Add about 1 tbsp of lemon juice, 2 small sprigs of dill, one slice of lemon and drizzle 2 tbs wine over packet. Slice compound butter into discs and place on top of salmon leek mixture. Wrap tightly, layering 2-3 times making sure the seams are sealed tightly. Repeat with following packets.

Heat grill to medium. (Heat is important here) or about 450 degrees if you have a temp gauge. Grill for approx 20-30 minutes (depends on heat of grill and thicknessof salmon). Serve immediately, sliding out of packets if desired. Serves 6
