    2 tbs olive oil
    3 cloves garlic, minced
    2 lb venison, cut in cubes
    2 onions, chopped
    2 tbs chili powder
    1 tbs ground cumin
    1/4 tsp ground red pepper
    1 (14.5 oz) cans diced tomatoes (undrained)
    2 (10 oz) cans rotel
    1 can light red kidney beans
    1 can pinto beans


Heat oil in large pot. Add garlic and saute until fragrant (about 1 minute). Add venison and saute about 5 minutes (until browned). Add onion and saute another 5 minutes (until onions are translucent). Add remaining ingredients, stir well, reduce heat, cover, and simmer for at least one hour. Remove lid and simmer for another 30 minutes before serving.

Or you can transfer ingredients to a crockpot after the onions turn translucent, add remaining ingredients and finish cooking in the crockpot.

Approx 16 1 cup servings.
