    4 chicken breasts, butterflied & pounded flat (8 cutlets)
    1 pkg light cream cheese, softened
    1 pkg frozen spinach, thawed, drained, squeezed dry & chopped
    1 tsp oregano
    1 tsp basil
    3 cloves minced garlic
    1 cup plain bread crumbs


Combine cream cheese, spinach, garlic, herbs and salt and pepper to taste.
Season chicken with salt and pepper.
Spread 2 T cheese over inside of chicken breast, roll up and secure with a toothpick.
Dredge rolls in breadcrumbs to coat.
Spray lightly with nonstick spray
Bake at 350 on cookie sheet until cooked through, about 12-15 minutes.
