    6 medium zucchini
    1 T butter
    1 cup bread crumbs
    6 T shredded Parmesan cheese
    3 tsp dried italian herbs (your choice)


Wash, trim and split zucchini long ways. Scoop out seeds and set aside.
Saute scooped out zucchini in butter until golden and caramelized. Add bread crumbs, herbs, cheese and salt and pepper to taste to zucchini and stir to combine.
Fill each boat with mixture (will be mounded up)
Bake on cookie sheet at 400 until tender, about 12 minutes.
