Ingredients

    1 cup steel cut oats
    1 cup lowfat milk
    1/2 cup unsweented applesauce
    2 egg whites
    1 cup whole wheat flour
    1/2 cup brown sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp cinnomin
    3 tablespoons flax seeds ground up
    3/4 cup whole almonds chopped
    3/4 cup dried fruit

    1tsp sugar
    1tsp cinnomin mixed and sprinkled on top before baking

Directions

soak oats in milk for an hour add egg whites and applesauce. blend dry ingredients add to liquid and stir just til combined spray muffin tins and cook 375 -20 minutes
makes 12 plus

    This is an excellent healthy recipe. The muffins are moist yet substantial with a little crunch. I used rice milk and muffins turned out great! - 8/25/09
