Introduction

This simple-to-make, super moist banana bread is a real treat for those doing low carb or those trying to avoid sugar. This simple-to-make, super moist banana bread is a real treat for those doing low carb or those trying to avoid sugar.

Ingredients

    1/8 c. Splenda
    1/4 c. Diabetisweet (or use all Splenda)
    1 egg
    1 medium-size ripe banana, mashed
    1/2 t. vanilla extract
    1/2 t. banana extract (or use all vanilla)
    2 T. reduced fat sour cream
    1/4 c. canola oil
    3/4 c. wheat protein isolate
    1/3 c. Bob's Red Mill almond meal/flour
    1/4 t. baking soda
    1/4 t. salt
    1/4 t. baking powder



Directions

Mix the first 8 ingredients in large bowl. Mix until it is all incorporated. Sift the next 5 ingredients and mix into wet ingredients until incorporated.

Add 1/4 c. walnuts if desired (not included in nutritional calculation). Pour into medium sized loaf pan that has been sprayed with Pam. Bake at 350 degrees for 30 minutes or until done.

The loaf pan I use yields 10 slices that are almost 1" thick.

NOTE: Diabetisweet can be found at Wal-Mart and K-Mart with the diabetic supplies. It looks and tastes just like sugar. It's in a light blue 1-lb. bag.
