Number of Servings: 1

Ingredients

    Avacado, medium
    Lemon Juice, 1 Tbsp
    Hot water, 1 cup
    Eggs, 2
    Salsa, 1/4 cup

Directions

Cut a ripe, medium avacado in half lengthwise.

Remove Pit.

Scoop out 1 Tbsp from the center of each half.

Finely dice scooped-out pulp and save.

In a small pot, combine 1 Tbsp lemon juice & 1 cup water.

Bring to a rolling simmer.

Add 2 eggs & poach for 60 seconds or until desired doneness.

Microwave avacado shells for 45 seconds.

Place a poached egg in each shell.

Mix diced pulp and 1/4 cup salsa.

Serve salsa mixture on side or over eggs.

    Looks delicious but missing the Avocado in your nutritional calculations, I refigured out the recipe for two servings and included the Avocado. Half an Avocado and 1 poached egg = 220 cal, 17.8g total fat, 187.0 mg cholesterol, 204.5 mg sodium, 10.5g total carbs, 6.4g fiber, 7.6g protein - 6/5/09
