Ingredients

    1 1.89L bottle of PC low sodium vegetable cocktail

    3 boxes 900ml each of Campbells low sodium chicken broth

    1 bag of spinach (227g) chopped finely

    2 cups of chopped carrots

    1 cup chopped celery

    1 medium onion chopped

    1 package of sliced white mushrooms, chopped (227g)

    1 can PC no salt added peaches and cream corn (341 ml)

    2 Cups of Nu Pak Soup Mix
    (Contains pot barley, yellow split, green,
    split, green whole, yellow whole, green lentils, bean mix)

    2 Tbsp. dried parsley

    4 Tbsp. italian seasoning



Directions

Thow everything into an 8 quart stockpot, bring to a boil. Turn heat down and simmer for a few hours.

Makes 14 1.5 cup servings.
