    2 bunches asparagus
    1 tbsp olive oil
    1 10 oz. package firm tofu
    1/4 white onion, chopped
    1 tbsp fresh minced ginger
    1 tbsp soy sauce
    1/2 cup vegetable broth
    2 tsp arrowroot powder or cornstarch
    1/2 cup light coconut milk


Drain the tofu of water, cut into bite-sized pieces and dry in a tea towel.
Cut ends off of asparagus and cut diagonally into bite-sized pieces.
Heat a tablespoon of oil in a pan and saute the onion for a couple minutes. Add asparagus and a dash of salt and cook for five minutes, stirring almost constantly.
Add tofu, cook for five more minutes, stirring frequently.

In a bowl, combine coconut milk, cornstarch, soy sauce, vegetable broth, and ginger. Add mixture to tofu/asparagus and cook for one more minute.

Eat by itself or on top of brown rice.
