Introduction

I prefer baking my taquitos - less calories! I have also used chicken instead of fish. I prefer baking my taquitos - less calories! I have also used chicken instead of fish.

Ingredients

    Cooking spray
    1 lb Tilapia fish fillets (about 4 fillets)
    1/2 cup vegetable broth
    1/4 cup water
    1 packet taco seasoning (can substitute with cinnamon, cumin, chili powder, cilantro and garlic)
    1 clean cheesecloth towel
    16 corn tortillas, about 6" diameter
    4 oz grated cheddar cheese, reduced fat

Directions

Preheat oven to 400. Heat vegetable broth and water in skillet. Add in fish and cook until the fish flakes apart. Add taco seasoning and mix well. The fish should be in small flake-sized pieces. Remove from heat. Take a clean cheesecloth towel and get it wet. Wring out as much moisture as you can. Place 8-10 corn tortillas in towel and microwave on high for 1-2 minutes. This will soften the tortillas. Careful! The towel will be HOT! Spoon about 1 Tbls of fish and 1 Tbls of cheese into each tortilla and roll. Place the rolled tortilla seam side down onto a greased cookie sheet (I used cooking spray) about 1/2 inch apart. Spray the rolled tortillas with cooking spray. Bake in 400 oven for 20 minutes. Enjoy!
