    1 block firm tofu
    1 TBL sesame oil
    5 TBL soy sauce (or less to taste)
    3 teaspoons fresh grated ginger (less if you don't want it too spicey)
    2 TBL grated onion
    2 cups veggie broth (I like Oseh brand, in the kosher/ethnic section, only 10 calories per cup prepared and very economical)
    3 medium stalks celery
    1/4 box or 1/2 cup frozen chopped spinach


Heat skillet or wok to medium high heat.
While it's getting uber hot, cut tofu into squares and toss with soy sauce, onion and mushrooms.
After skillet is way hot, add oil, celery, then tofu mixture, reserving the liquid.
Stir about gently or shake a time or two till tofu is slightly browned, then add remaining soy sauce mixture and ginger and spinach.
When the soy sauce simmers off a bit, reduce heat to a low medium and add veggie broth.
Simmer a minute or two and serve.
