Introduction

Ingredients

2 Large fresh Eggs
1/2 C. Splenda Sugar Blend for Baking
1/2 tsp of Cream of tartar
1 tsp of Mint Extract
I added a drop of green food coloring.
Directions
Makes 24 cookies.
Set out eggs to get to room temperature.
Set oven temperature to 190 degrees. These can set overnight they actually are drying not really baking.
MIX COOKIES
Separate egg whites into small deep bowl
discard yolks.
Whip on high with a hand mixer about 5 minutes or until firm dry peaks form .
Spoon sugar in a tablewspoon at a a time while continuing whipping. Until frothy firm peaks siloky and firm.
Add in cream of tarter. When blened ad in extract.
When blended add in food color.
BECAREFUL not to over whip or they will drop and you have to start again. Egg whites can be very tempermental.
Prepare a baking sheet by lining with parchment paper.
Either spoon on or using a pastry bay press onto sheet making 24 cookies.
Set in oven for 2 hours or turn oven off after two hours or leave in oven over night.
